What are carobs ? The carob is a legume that comes from the tree of the same name, with the seeds being characterized by having a high content of natural sugars, proteins and minerals (calcium, silica, iron and phosphorous). The carobs tree Ceratonia siliqua, is a species of flowering evergreen shrub or tree in the pea family, Fabaceae, that is native to the Mediterranean region. It is cultivated for its edible seed & pods. From the point of flowering, it takes 11 months for the carobs pods to mature on the tree ready for harvesting.

The seeds of the fruit are ground up to make locust bean gum, which is used as a thickening agent. The rest of the fruit is chopped and dried naturally, before being used as a high-quality food supplement for humans and animals. Both in terms of its qualitative richness in fibres and tannins (polyphenols) and its natural medical properties, is indispensable in mixtures that strive to strengthen the use of natural products and improve quality. There are significant differences based in the variety and the land on which it is grown.

There are male carob trees, female carob trees and hermaphrodite carob trees. Male trees only produce flower for pollination of the female trees and the male trees will never produce any carob pods. Female trees produce carob pods and need the pollination from either a male flowering tree or a hermaphrodite flowering tree. Hermaphrodite trees produce both male and female flowers, so it can pollinate it’s self to produce carob pods and also pollinate other female trees close by. There are many different varieties of carob trees and we only selected varieties to plant based on the taste of the carob pods. Whole carob pods and carob kibbles are great snack food and also can be added to fruit and nut mixes. Carobs are also known as St. John’s bread because, according to the tradition of some Christians, St. John the Baptist subsisted on them in the wilderness.

The Carob is harvested from the field between August and September each year. The farmers transport it to our facilities and we store it so that we can work throughout the year. The carob is left to rest for a few months so that it is dry enough to work on industrially. In the manufacturing process, the pods are broken in order to separate the seed from the rest of the fruit. It is a natural process and no type of chemical product is added and the fruit retains all its natural properties.
