A PERFECTED PRODUCTION PROCESS FOR FIG FRUIT
The processing stages that are employed in the fig fruit production facilities are Fumigation, Calibration, Aflatoxin Sorting, Pick & Choose, Washing, Drying, Manipulation & Packing, Storage, and Delivery. Fumigation is carried out to eliminate pests that arrived on the fruit prior to harvest. The dried fruit industry in Turkey generally uses approved chemicals or physical methods, such as shock treatment at -40°C, for fumigation.
Aflatoxins are mycotoxins produced by two species of Aspergillus (A. parasiticus and A. flavus) and vary from 0.7 to 1.3% in figs produced in Turkey. In the aflatoxin screening process, the figs are examined under darkroom conditions under a 365 nm UV lamp, and bright greenish-yellow fluorescence fruit is removed. Then the figs are washed with 8% saline at 50-60°C to remove physical impurities. After washing, 60°C air is used in tunnel or cabinet type dryers to dry them and to reduce the moisture content of figs below 25%. Then the hand-shaped figs are packaged and stored. Optimum dry fig storage conditions are +4°C and 55-60% relative humidity in cold storage rooms.

Fig fruit has also a symbolism around it. Filled with all these tiny seeds, it ended up symbolizing fertility and prosperity, unity and knowledge. For someone northern, figs are another exotic fruit, something strange and expensive, something he buys by the piece and tastes like a RARE delicacy.
