Small capers such as nonpareille capers ( capers non pareil ) are firm in texture and less aromatic than their more mature counterparts, which are more tender and have a stronger flavor.

Capers vs. Caperberries

Capers are not the same as caper berry. While capers are the immature flower buds of the bush, caperberries are the fruit the bush produces once the buds have flowered and been fertilized. When the immature bud is not picked, it eventually develops into the caperberry fruit.

Caperberries are larger and firmer than Capers and have seeds. They are usually served with the stem attached and have a much stronger flavor. Similar to Capers, Caperberries are classified into three groups based on their sizes indicated below.

Small (0-13mm), Medium (13-18mm), and Large (18-22mm)

Capers and Caperberries are preserved by pickling them in a brine of vinegar & salt, or by curing them in sea salt. While Capers are harvested by hand in the spring and early summer when the buds are still tightly closed, caperberries are harvested up to August. Once harvested, capers and caperberries are dried and brined with vinegar & salt or cured in sea salt, bringing out their lemony, slightly floral green olive-like flavor.

While the brine-cured capers have a firm texture and “floral,” “grassy” flavors, the salt-cured capers are more tender, with hints of “meaty,” “fermented” flavors.
