Feast Valley® Roasted Eggplant Puree

The cuisines of most Mediterranean countries include some type of eggplant salad. It is usually grilled or roasted, mashed or pureed, and seasoned with olive oil and lemon, at a minimum. In this most basic form, the dish is often called “peasant caviar,” presumably because after grilling or roasting, this vegetable assumes a rich, lush, patrician texture.

Smoky and pleasantly earthy, Feast Valley® Roasted Eggplant Purée has a rustic yet smooth texture. We roast our eggplants in the traditional way, on fire. This is the perfect way for any delicious eggplant recipe. The aroma and taste of the ‘home-cooked eggplant promise unique flavor combinations.

Fire-roasting simply means cooking over an open flame… The basic idea of fire-roasting is exposing the eggplant to fire so that the flame blisters and slightly blackens the skin of the food. These skins are cleaned during the process. The remaining eggplant will have a high natural smoked flavor and smell.
